Chilled Lemon Tart
makes two 9 inch flan rings

Ingredients

For the pastry base;

  • 6 oz sugar
  • 14 oz butter
  • 1 egg
  • 1 tsp vanilla paste
  • 1 lb bread flour

  1. Combine all of the ingredients in a food processor and then wrap in parchment and chill for at least 30 minutes.
For the Lemon filling;
  • 3 lemons (zest and juice)
  • 6 eggs
  • 10 oz granulated sugar
  • 9 fl oz heavy cream

  • Powdered sugar to garnish
  • 1 jar clotted cream to garnish
 
  1. Preheat the oven to 350 degrees.
  2. Line a 9 inch flan ring with the pastry and part bake using baking beans for about 10 minutes.
  3. Whilst the tart is baking prepare the filling; In a large bowl add the eggs and sugar and beat together until well blended.
  4. Pour on the cream and whisk into the egg mix. Then add the lemon juice and zest.
  5. Remove the baking beans and pour the lemon mix into the tart shell. Return to the oven and bake for a further 30 - 40 minutes until the filling is just set.
  6. Chill the tart and just before serving, dust with the powdered sugar and top with the clotted cream.
