- Preheat the oven to 350 degrees.
- Line a 9 inch flan ring with the pastry and part bake using baking beans for about 10 minutes.
- Whilst the tart is baking prepare the filling; In a large bowl add the eggs and sugar and beat together until well blended.
- Pour on the cream and whisk into the egg mix. Then add the lemon juice and zest.
- Remove the baking beans and pour the lemon mix into the tart shell. Return to the oven and bake for a further 30 - 40 minutes until the filling is just set.
- Chill the tart and just before serving, dust with the powdered sugar and top with the clotted cream.
