In preparation for his Culinary Tour to Tuscany next year, the Royal Chef Darren McGrady brings us some Italian comfort food dishes perfect for holiday entertaining.

Menu includes;
A warm Salad of Honey-Roasted Parsnips, Cranberries, Pears and Macadamia Nuts with a Creamy Gorgonzola Dressing.

Apple, Juniper and Cider Braised Pork with a Potato Chive Crust.

Creamy Sage Polenta with Italian Sausage and Mushroom Compote.

This Month's Recipe

Mars Bar Cheesecake

Fall time and so many parties going on. Bring a dish they say, but you can't take the same as last year. You need a dish that will wow everyone. Remind them that you are the best cook on the block - and why they invited you after all (laughs)

Here is a dish that will blow the socks of your guests and have them begging for the recipe. Don't forget to send them to my website to sign up for this newsletter. So, here's the good news, this recipe is just 100 calories a portion . OK, the bad news ? you have to cut the cheesecake into 386 pieces (laughs) C.mon, it's the holidays, who want's seconds !

  Makes 8 Portions

  • 6 ounces chocolate digestive cookies, or graham crumbs with 2 oz grated chocolate
  • 1/4 cup unsalted butter, melted
  • 2 Tbs brown sugar
  • 2 Tbs unsalted butter, extra
  • 1/2 cup plus 2Tbs heavy cream
  • 2 ounces milk chocolate, chopped finely
  • 2 tsp unflavored gelatine
  • 3 Tbs water
  • 2 x 250g packets cream cheese, softened
  • 1/2 cup granulated sugar
  • 2x 60g Milky Way Bars, chopped finely
Raspberries to garnish

1. Blend or process biscuits until mixture resembles fine breadcrumbs. Add butter process until just combined. Press biscuit mixture evenly over base of an 8 inch springform tin, place on tray; refrigerate about 30 minutes or until firm.

2. Meanwhile make butterscotch sauce; combine brown sugar, extra butter and 2 tablespoons of the cream in small saucepan. Stir over low heat, without boiling until sugar dissolves. Boil for 2 minutes.

3. Make chocolate sauce; combine chocolate and another 2 tablespoons of the cream in another small saucepan; stir over low heat until chocolate melts. Set aside.

4. Sprinkle gelatin over the water in small pan, place the pan over a low heat until the gelatin melts.

5. Beat cream cheese and granulated sugar in medium bowl with electric mixer until smooth. Beat remaining cream in small bowl with electric mixer until soft peaks form. Stir gelatin mixture into cream cheese mixture with chopped Milky Way Bars; fold in cream.

6. Pour half of the cream cheese mixture into crumb crust; drizzle half of the butterscotch and chocolate sauces over cream cheese mixture. Pull skewer backwards and forwards through mixture to create marbled effect. Repeat with remaining cream cheese mixture and sauces. Cover cheesecake; refrigerate for about 3 hours or until set.
